Dried mushrooms are handy, tasty ingredients, that once soaked, reconstitue to 5 or 6 times their dry wight and can be used like fresh mushrooms. To reconstitue soak mushrooms in a bowl of warm water for 20 minutes, then squeeze gently between the fingers. Use the soaking liquid behind as this may be stlightly geitty.

Ceps/Porcini and chanterelles are so delicious in omlettes, risottos, and pasta. Shittake and oysters enhance stir fries, All are lovely in stews, soups and stagonoffs.

Once opened store in an airtight container.
